Carrots and peas...Awards and such...

 Carrots and Peas Egg Rolls
A rather dreary Sunday with the nip back in the air, prompted this weekend snack. Turned out to be a little spicy for us, with ginger, black pepper, finger hot chillies and red chilli powder...good eaten in small portions.
Ingredients
4 sheets of  square wonton wrappers [used all natural Nasoya brand]
Carrots Masala: 3/4 Cup fresh grated carrots [organic carrots used here]
1/8 tsp turmeric powder
1/4 tsp black pepper powder
1/2 tbsp vegetable oil
Pinch of sugar
Salt
Green Peas Masala: 3/4 Cup green peas
1/4 tsp cummin seeds
1/8 tsp turmeric powder
1/4 tsp red chilli powder
1 tsp fresh grated ginger
3 cloves garlic, finely minced
2 finger hot chillies, finely chopped
1/2 tsp crushed lemon grass roots
1/2 tbsp vegetable oil
Salt
Method
Green Peas Masala: Heat 1/2 tbsp of oil, 
Temper the cummin seeds and 1 dried red chilli flakes, 
Add the finely minced garlic, ginger, green chillies and crushed lemon grass, 
Saute until soft, 
Add the turmeric powder, red chilli powder and the green peas and saute until soft.
Keep aside and let cool.
Carrots Masala: Heat 1/2 tbsp of oil  and saute the grated carrots for a couple of minutes,
Add the turmeric, black pepper powder, pinch of sugar and salt,and Fry for a minute.
Keep aside and let cool.

Method
Heat oil in a deep pan,
Follow the method for wrapping the wonton, layering the carrot masala at the bottom and the peas on top, which has been done here.
Deep fry until golden brown.
