Spinach: Sauted Spinach

Spinach Vazhyattiyathu: Sauted Spinach

A medely of leafy vegtables, red, green, purple and memories of the humble drumstick leaves upperi: a quick saute in coconut oil, sometimes a clove of garlic, maybe a lightly crushed  red pearl onion, perhaps a garnish of fresh grated coconut. Was always a favourite with the ladies. Here I have used fresh, organic spinach leaves, 10 stems.

Ingredients
10 stems of fresh spinach /6-7 cups of tightly packed chopped spinach leaves
1/4 tsp turmeric powder
2 finger hot green chillies
1 dried red chilli
2 small cloves of garlic
1 tbsp oil
Method
Heat the oil,
Lightly crush the garlic cloves and saute until soft,
Add the broken red chilli  and the slit green chillies,
Saute for a couple of minutes,
Add the washed and drained spinach leaves
Cook until done.
Season with salt and serve.

  5. you make something as simple as this look out of the world - had a malabar spinach stir fry for lunch this week - simple tempering and sauteed the spinach with it. Love your presentation
