Spring and Sunshine...


Fruit platter: Honeydew melon scoops  and strawberry in  lightly sweetened  Orange-Ginger syrup.
Pending work, unread, half read books and piles of paper to tackle...but what joy to soak up sunshine with mango, banana, strawberries, a touch of sugar, milk and shards of ice...

A Window of Summer: Melon scoops...

Sunlight streaming in today morning called for this light summer treat...


Ingredients
1 1/2 Cups of Honeydew Melon Scoops
Less than one 1 tsp of Raspberry preserves
A quarter wedge of Meyer lemon
1/4 Cup of Honeydew melon reserve
Water
Method
Heat 1 tsp of raspberry preserves on medium heat,
Add water, in tbsps according to the consistency you need.
Have not added extra sugar, since there is already sugar in the preserves.
Bring it to a gentle simmer.
Add the reserved honeydew melon juice and mix well,
Add a tiny squeeze of the meyer lemon.
Pour it over or serve with the melon scoop balls! :-)
Decorate with wafer thin slices of meyer lemon which balances the sweetness of both the preserve  and the honeydew melon.

Notes
In summer and season, use the fresh juice of raspberries/ strawberries. The Meyer Lemon wafers/slivers are a good counterpoint to the mild flavours of honeydew melon.
