Brinjal: Vazhuthinanga Upperi

Sunlight and...
Stir fried purple eggplant slivers, garnished with spring onions.
Red Chilli powder, Turmeric Powder, pinch of Asafoetida, Salt and Coconut oil.

    I love brinjal in all preparation. This dish is very new for me. tempted to try it now here. But suddenly I saw I dont have any Hing..so need to wait until I am back as I dont cook with variation from the recipe.

    Yes Chitra, it is Mezhukkupuratti/Mezhukkuvaratti; however the funny thing is we always call it an Upperi in this region...
