Potato Podimas
Ingredients
3 Medium Yukon Gold Potatoes = yields little more 1 cup of tiny potato balls [there will be leftover potato scraps]
1 tsp Red Chilli Powder
1/2 tsp turmeric powder
2 pinches Asafoetida powder
4 tbsps Oil
Salt
Finely chopped corainder for garnish.

Method
Parboil the potatoes,
Drain and scoop out balls with a melon scoop.
Heat the oil in a pan, add the potato balls and fry until evenly coated,
Add the spice powders and the salt after 3 minutes,
Continue stirring well and frying until a golden brown crust starts forming on the potato balls.
Garnish with chopped coriander and serve.
