Mixed Ginger Vegetables...


Mixed Root Vegetables, Mushrooms, Mini Bell Peppers and Garlic,  with Ginger and Red Chilli powder and fennel garnish...
Ingredients
1 cup red skinned potatoes,cubed,
1/2 Cup carrots cubed,
2-3 mini bell peppers = yellow, orange  and red
3-4 large cloves of garlic lightly crushed,
1 inch piece of ginger finely grated
1/2 tsp turmeric powder
1/2 tsp red chilli powder or according to taste
3/4 tsp Srilankan Curry powder [ one can use any garam masala]
2 tbsps fresh fennel leaves finely chopped for garnish
Method
Heat 2 tbsps of oil in a skillet on medium high heat,
In 1 tbsp of oil mix all the masala powders and pour into the skillet,
Add potatoes and make sure it is coated well,
Cook  on high heat for a few minutes then turn down the heat and cook with lid on until almost done,
Add the rest of vegetables alongwith the grated ginger and turn the heat to medium high,
Season with salt and cook until done,
Garnish with fresh fennel fronds and serve.

  2. Thanks Preeti; the Srilankan Curry powder was not home-made, got it from someone who travelled there. It is shade darker than and has flavours of the traditional sambhar powder but with curry leaves added in plus another flavour am not able to identify. Will search and update.
