Steamed and Served
This goes to Susan's Black and White Wednesdays. Undappam from a 're-worked' batter. Daydreaming: Rice and Split Black Gram batter for Idlis left on the stove top with low flame, which slowly got 'cooked' and partially steamed. Top part poured out and found to be mercifully working. Lower portion scraped off, re-ground and mixed with fresh batter, a tempering and with a method of part frying and part steaming, to create edible Undappams. :-)
Salvaged and Re-worked
Never heard about undappam, looks very classic.
